At The Purple Peony, we believe the answer starts with respecting the ingredient.
We choose cacao for its natural character, work in small batches, and carefully select the ingredients we bring into the chocolate.
We’re not trying to make every batch taste exactly the same.
We’re trying to understand what the cacao is giving us and build from there.
That might mean developing a new flavour around a natural note we discover.
It might mean using less sweetness so the cacao can come through.
Or it might mean deciding that an ingredient simply isn't needed.
For us, craft isn't about adding more.
Sometimes, it's about knowing what to leave out.
That is the philosophy we're building The Purple Peony around: thoughtful ingredients, careful making, and chocolate that lets nature have a voice.
And this is where the journey from bean to bar — and from bar to bonbon — becomes really interesting.
